Cottage Cheese Dill Rolls

(From the Culinary Institute of America)
It says it yields 24 rolls

4 1/2 tsp active yeast
1/3 cup water, warmed to 110 F
4 1/4 cups bread flour
1 1/2 cups small-curd cottage cheese
1/4 cup minced yellow onions
2 large eggs
1 tbsp butter, softened
3 tbsp chopped fresh dill (can sub. chives, scallions or oregano)
2 tsp prepared horseradish
2 tbsp sugar
1 1/2 tsp salt
2 1/4 tsp baking soda
1/3 cup butter, melted, divided use
3 tbsp coarse salt for sprinkling

1. Place the yeast and warm water in the bowl of the mixer and stir to completely dissolve. Let the yeast proof until foamy, about 5 minutes. Add the flour, cottage cheese, onions, eggs, 1 tablespoon softened butter, dill, horseradish, sugar, salt and baking soda to the yeast mixture. Mix the ingredients together on low speed using the dough hook just until the dough begins to come together (it will look rather rough), about 2 mins. Increase the speed to medium high and mix until the dough is smooth, an additional 5 mins.
2. Turn the dough out onto a lightly floured surface, knead once or twice, and gather into a smooth ball. Place in a lightly greased bowl, cover with plastic wrap, and let the dough rise in a warm place until doubled in size, about 2 hours.
3 Fold the dough gently over on itself in three or four places. Cover once more and let the dough rise a second time until doubled in size, about 1 hour.
4. Preheat the oven to 400 degrees. Line 2 baking sheets with parchment paper or grease lightly.
5. Fold the dough gently over on itself in three or four places, turn the dough out onto a lightly floured work surface and cut into 16 equal pieces (about 2 ounces each). Cover the pieces and let the rest until relaxed, about 15 mins. Round each piece into a smooth ball and place in even rows on the prepared baking sheets. Cover and let rise until the dough springs back when lightly touched but does not collapse, 20 to 30 mins.
6. Brush the top of each roll with a little of the melted butter. Bake until golden brown, about 20 to 30 mins. As soon as the rolls are removed from the oven, brush lightly with the remaining melted butter and sprinkle lightly with salt.
7. transfer to a cooling rack to cool completely before serving.


It takes a while, but these are SSOOO yummy!

Aside from being totally enamored with a new band called Distrails, getting my butt kicked by NaNoWriMo and dealing with more testosterone in the house, (new puppy), a few other things have been happening.
The short that I am working on right now, A Hare's Breadth (changed from breath), is for a Spring anthology with Amira Press called Mating Season. My fellow MS writers include Dahlia Rose, Brenda Steele, Tina Gayle.
Also myself and Kathleen Rowland will be the featured authors of December for Amira Press! To celebrate I will be holding a contest starting Dec 1 for a free copy of Cold Kiss, so check back for the contest rules next week!

Meeting Farrell has opened up a whole new world for Aileen, unleashing abilities that she never even knew she had. He gives her acceptance, friends and love. But her new found abilities have put both of their lives in danger, and it will take a little piece of each of them to save the day.

Cold Kiss is the first book released by Dorian Wallace. Well written, entertaining with a unique plot, Ms Wallace has created an enchanting sub culture for her characters. Like any good book it's not all roses and rainbows, but the dark aspects make the book that much more enjoyable along with the fact that the ending leaves the book open for sequels. I have to give Cold Kiss my highest praise, it is a book that I will definitely read again and I hope to see more of this world and these characters soon.

Been a while.

So what's going on in Dorian's little world? Well, I've been writing, going to book signings, chasing after children and writing more.
I got the go ahead from my publisher to make Cold Kiss into a trilogy which I am VERY excited about! I am also working on a book due out this Spring but am not at liberty to reveal any info just yet. Right now I have about 6 books lined up so I apologize if I don't update that much....just poke me if you'd like to know what I'm doing :)

Excerpt from Cold Kiss

The knock came again.

“All right then.” After putting her drink and the pills back on the counter, she strode over to the door to look out the peep hole. It was a neighbor she had only seen in passing. She remembered his face, because he was the only person who had smiled at her since moving in. Plus he was very good looking. That was right before Spencer left, and she hadn’t seen him since. Aileen reluctantly opened the door. Not that she feared what he might do to her at this point, but she wanted to get him on his way so she could finish. When the door swung open a lukewarm breeze flooded the room carrying with it the slightest hint of the orange blossoms that Aileen cherished during a California Spring. Amazing. The whole room seemed to lighten up, and there stood a tall, statuesque grey-eyed man in her doorway.

“Hiya! I’m Farrell. I know you’ve been here for a while, and I just feel bloody awful for not coming by sooner. I’ve been busy with a few things, and I had to figure out which flat you were in.” He had barely taken a breath. In fact it seemed like he’d run up the three flights of stairs to get there.

She extended her hand after a slight bewildered pause. “Hi, it’s nice to meet you. I’m Aileen.”

“Oh. Yer from America, eh? What part of the States are ye from?” He seemed very excited about her nationality.

“I’m from California.”

“Really? Near San Francisco or Hollywood?”

“Hollywood, I guess, a little town called Redlands. It’s about an hour and a half east of Hollywood. I was closer to Palm Springs.” She felt herself relaxing a bit.

“Brilliant! Is it crawling with stars?” Farrell was like a child talking to Santa.

“Sort of. I’ve met a few, even went to school with one. Would you like to come in? I didn’t mean to be rude.” She moved aside and opened the door wider for him to move through.

“I would love to. You weren’t being rude. It’s not like I gave you much of a chance for the invite with my barrage of questions.”

“It’s quite all right. Please excuse the place. I don’t have much. Well, you’re the first company I’ve had.” She was a little embarrassed at the sparse nature of her apartment. Except for the used tissues overflowing the bin, there was only a chair, a few books, an end table, a lamp, and a small rug.

“Yer kidding! Well, I’m honored to be the first! I brought ya a little house-warming gift. Hope ya like whiskey!”

“As a matter of fact I do. I could sure use a shot or two. How about you?” She made no hesitation in moving into the kitchen for a couple of glasses.

“I suppose I could be persuaded to partake.” They both laughed. She pulled two mismatched cylinders out of the cabinet, and he moved to the living room side of the counter.

“Taking inventory are we?” Farrell had noticed the pills laid out in neat little rows on the counter.

“Oh, ha, yeah, that’s an art project slash boredom buster. I’ve gone through all my books, and you can see . . . no television,” she quickly added, lying. “Here we are,” she said, setting the glasses down and wiping the pills back into the bottle as he uncorked the strangely labeled bottle. It piqued Aileen’s interest, but still, she was unafraid of this potentially poisonous liquid and this beautiful stranger that had side rushed his way into her life. “So what’s that we’re toasting with?”

“Oh, it’s made by friends of mine just over in Aberdeen. It’s called Witches Tits. Only a select few get two bottles every year on winter solstice. This is the last of mine, but I’m getting more in a few months time when we have our big party. Would you like to come? I’d be honored if you’d join us.”

She paused a moment, thinking of her thwarted plans. “Sure, why not. I love parties.” Hell, what were a few more months in the scheme of things? Friends and fun seemed to have escaped beyond her reach, and now here it was standing across the counter sharing libations. He was a breath of fresh air and oh so hot! She wondered if this was life begging for a second chance.

It's in the mail...

Got my first edits today and am going to be working on those for the next few days. Not much else to report aside from.....Fall is almost here!!!! The air was slightly cool this morning and that is always a good sign for me. I'm crazy about Fall, in fact my entire kitchen is covered in an Autumn theme and cobalt blue. I grew up in CA where Summer is brown and winter is green, but no changing of the leaves. I moved to NC in 1995 and have been enjoying all of the season changes. Can't wait for the Apple Festival in Hendersonville, the corn maze in Shelby and Pagan Pride Day here in Charlotte!!!
So yeah, I'm off to work now. Later taters!

Blurb for Cold Kiss

First

I've been meaning to start this blog for sometime. I have a livejournal for my alter ego, (real persona).
I was offered my first contract this morning with Amira press on my first book, Cold Kiss. I am still, as we speak, or rather, as I type, signing all the paperwork.
